2 medium-small or 1 large beets, peeled and thinly sliced 3-4 carrots peeled and cut in half extra virgin olive oil Salt and pepper spices for vegetables (you can use spice mixes to flavor roasts of meat or fish) 8-10 sheets of phyllo dough (12 x 17 inches each), thawed if frozen 500 g of fresh cow or goat ricotta 2 medium BIO eggs 5 tablespoons of fresh pesto

DO THIS Preheat the oven to 160-180 degrees. Brown the vegetables in a non-stick pan with a drizzle of oil and the spices. When they are golden brown and a nice color, place them on a plate and let them cool. Meanwhile, prepare the mixture for the base. In a bowl, pour the ricotta, pesto, eggs and mix with a whisk or fork. Season with salt, add the spice mix. Now the phyllo dough. Take it out of the fridge at the last moment. You need a clean cloth spread out on the work surface and your pan where you have decided to cook the quiche already lined with parchment paper soaked under water and squeezed well (to prevent it from burning during cooking and to make it adhere well to your pan ). Take a cup and mix 1/2 water and 1/2 oil. With a kitchen brush, brush each sheet of phyllo dough with this mixture before placing another sheet on top. Basically you have to create layers that will cook in the oven and give you the feeling of crunchiness. You CANNOT skip this step, the phyllo dough in cooking tends to dry out, if not previously wet it will crack ... Once you have at least 4 layers stacked (but you can go up to 8) pour the liquid mixture you kept aside and arrange the vegetables in an orderly manner. It must also be beautiful to look at! Bake in the oven for at least 20-30 minutes in a low static oven 160-180 ° and then 5-10 minutes in a convection oven 180-200 °. Cooking depends on the size of your quiche and the power of your oven. You can also put one sheet of phyllo dough on top of the other one offset to have an even more crunchy effect! You can serve it lukewarm or enjoy it cold also the day after. It is very good!
